With summer over, and it getting dark too early for grilling, it’s time to cook the steaks inside. I use this simple recipe that Henry (who now runs Geaux Plates down in Nawleenz ) relayed to me about three years ago:
min on each side on the stove top
then in the oven for like 10 min
at 500

I prefer to do Broiler for 30 secs on each side, then oven at 450 for 10 mins but it’s mostly the same thing.
